“The Fusion Brasserie has a thoroughly Metropolitan feel, accomplished presentation, friendly service and an elegant dining room with brick red walls, but it is the innovative dishes that set Fusion apart from local competition.”

“We started with breads and dips – Pane casereccio – artisan breads, served with sun-blush tomato and fusion hummus. This was a considerable display of the chef’s baking skills as well as a presentation of simple yet flavourful spreads.”…”The pasta was cooked, as one would expect, to perfection”…”We had intended an early night but in true Italian fashion the conversation with our hosts flowed freely. This chef is generous. Yes, the portions are substantial but his generosity extends not only to plates but to people. His passion and pride are evident. His skill is unquestionable and his enthusiasm contagious. A warm evening of marvellous food and friendship.”

“An impressively extensive wine list that includes a modestly priced house selection that doesn’t stint on quality, complemented the food admirably”…”But it’s not just outstanding cuisine that sets Fusion apart. Ingredients are locally sourced, with commendable awareness of health and allergy issues no flour is used in the sauces, gluten free pasta is available and even the butter is homemade; the service is friendly and, as borne out by the many regulars, there’s a relaxing ‘at home’ vibe that makes you want to just put your feet under the table and stay for the night. I’ve been reviewing restaurants for some 20 years, and have no hesitation in saying Fusion is right up there in my all time Top 10.”

“I would recommend this restaurant to anyone. In all it represents remarkably well-prepared food at what seem to me to be extremely affordable prices. The ambience of the restaurant, wholly transformed into a bright, sophisticated eatery from the previously somewhat-seedy Bird in Hand pub, is special too. Save it for a special occasion or surprise a loved one tonight, because you won’t be disappointed.”
